Who doesn't love meatballs -- especially the garlicky ones. Here is my version of my meatballs that would fit your healthy lifestyle and something that even your kids would love (well, my kids love it).
Garlicki Meatballs with Neufchatel Cheese
Ingredients:
-1 pack of ground beef (90% lean 10%fat) - a little more than a lb
-2-3 tbsp minced garlic - the more the tastier
-1 tsp salt and pepper
-1 tsp dried oregano
-4 oz Neufchatel cheese
-1 egg white
-3-4tbsp vinegar
-2tbsp olive oil
-1/3 cup bread crumbs
1. Mix everything all the ingredients,
2. Form into small balls.
3. Bake at 385 Fahrenheit for 24 mins.
4. Take it out of the oven, let it cool and Enjoy!
Quinoa
Ingredients:
-box of Quinoa
-minced mushrooms
-minced bell pepper
-chopped spinach
1. Put all the ingredients in the rice cooker (1 cup uncooked quinoa to 2 cups of liquid).
2. Turn on the rice cooker. Once it is is cooked, add a little bit of margarine.
3. Mix and Enjoy!
