I received an electric pressure cooker (Instant Pot) from my mom last Christmas and my husband and I are obsessed! It's so easy to use and clean up is a breeze. I've heard horror stories about pressure cookers in the past and I must admit, I was so nervous when I made my first meal. But seriously, I love my Instant Pot now! This is one of my favorite dishes to make in my IP.
Ingredients:
-1 lb cod
-3 medium sized potatoes (cubed)
-seasoned panko breadcrumbs
-1 egg white
- 1 tsp garlic salt
-pam spray
- Asparagus
1. Place cod and cubed potatoes in the instant pot and set it for 12 minutes (high pressure).
2. Once the 12 minutes is up, release the pressure right away and mash the potatoes and cod together.
3. Add some garlic salt and 1 egg white,
4. Form the mixture into small patties and bread it with seasoned panko breadcrumbs.
5. Spray the pan with pam and pan fry the patties til both sides are golden brown. It would only take about 2 minutes.
6. In a grill pan, spray some pam and grill the asparagus. Once it is cooked, sprinkle some garlic salt.
7. Serve cod cakes and asparagus on a bed of any kind of salad. Enjoy!
